Ingredients
4 beets, peeled and halved
2 tsp. extra virgin olive oil
1 tsp. dried oregano
salt & pepper to taste
Directions
1. Toss all of the ingredients in a bowl.
2. Place on a baking sheet.
3. Cook at 350 degrees for approximately 45 min., until the beets are fork-tender, turing every 15-20 min.
